Senate Bean Soup

Ingredients
- 1 1/2 lbs dried navy or pea beans, washed and sorted
- 4 qts water
- 1 lb smoked ham hocks
- 2 C yellow onion, coarsely chopped
- 2 T butter
Instructions
- Put the beans, ham hocks, and water in a pressure cooker and high steam for 22 minutes.
- Sauté the onions in the butter until richly browned.
- Fast-open the pressure cooker and remove the ham hocks. Optionally, mash some of the beans to thicken. Trim the meat from the hocks and put the meat back in the pot. Add the onions, season to taste, simmer for 1 minutes, then serve.
- Plate and serve.
